Black Cherry Oatmeal Bars Recipe

Oatmeal bars (or just oats in general) are great for boosting your energy and giving you a much-needed top up of fibre, known to lower cholesterol and reduce the risk of heart disease. And apart from being full of health-benefits, added with flavours of cinnamon and vanilla, these oatmeal bars make a tasty snack to eat on the go anywhere.

Ingredients:

  • 2 sticks (226g) unsalted room temp butter
  • 2 x 2/3 cups of white sugar
  • 2 cups rolled oats
  • 2 cups all purpose flour
  • 1 tsp vanilla extract
  • 1 tsp grounded cinnamon
  • 1/4 tsp salt
  • 2/3 tsp baking powder
  • 1 big jar black cherry preserve

Method:

  1. Pre-heat the oven to 350ºF / 175ºC.
  2. Grease a baking pan (I used a 20 x 20 cm / 8 x 8 in) with butter and leave to the side.
  3. Cream the butter and sugar together really well.
  4. Add the rest of the ingredients and mix well.
  5. Press half of the mixture into the bottom of the baking pan.
  6. Spread the preserves over it in an even layer.
  7. Crumble the remaining mixture, with your hands, over the raspberry preserves.
  8. Bake for 40 minutes, or until lightly golden brown.
  9. Cool completely before cutting.

If you can’t get hold of any Black Cherry preserve then it’s just as easy to make your own – if not easier as you don’t need to leave the house! All you need is pitted black cherries, sugar and lemon. Glaze the cherries with sugar and leave for a couple of hours then simmer on a low heat for 1 hour.

Oaty Banana Bread

This one’s more like banana cake… ssshh!

Serves 16|Takes 1 hour

INGREDIENTS:

65g Flahavan’s Jumbo Oats
100g Flahavan’s Porridge Oats
130g Whole Wheat Flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch of sea salt
4 medium very ripe bananas, mashed
300ml honey
300ml maple syrup
60g unsalted butter, melted
60ml oat milk
100g low fat Greek yogurt
2 large eggs
1 teaspoon vanilla extract

METHOD:

Preheat the oven to 170ºC fan bake. Spread 50g of Flahavan’s Organic Jumbo Oats and 100g of Flahavan’s Organic Porridge Oats in a single layer on a baking tray lined with baking paper and place in the oven.
Toast the oats for 8-10 minutes, until very light golden, mixing once half way through. Remove from the oven and set aside to cool.
Using baking paper, line two 20 x 6cm loaf tins leaving two sides overhanging slightly. Lightly mist with non-stick spray.
In a bowl, mix together all the dry ingredients, then stir in the toasted oats and set aside.
Mash the bananas with a fork in a large mixing bowl, then whisk in the wet ingredients, adding the eggs and vanilla extract last – the batter will have a very wet consistency at this stage.
Add the dry ingredients to the wet mixture. Slowly and gently stir the mixture with a wooden spoon until thoroughly combined. Pour the batter evenly into the 2 prepared loaf tins, leaving 1cm at the top. Sprinkle the banana bread mix with the remaining oats for decoration.
Bake for 25 minutes, then loosely cover the tins with foil and return to the oven for a further 25 mins. Once cooked, remove from the oven and leave to cool in the loaf tins for an hour before transferring to a dish and serving.

Mushroom Omelette with rocket and crusty bread

 Omelettes are really quick to make. Don’t be tempted to over-beat the eggs, as it will spoil the texture.

Serves 1

Ingredients

  • 2 teasp. olive oil
  • Knob of butter
  • 100g mushrooms, sliced
  • 3 large eggs
  • 1 teasp. fresh chives, chopped
  • A little salt and freshly ground black pepper
  • Lightly-dressed rocket salad and crusty bread, to serve

To Cook

Heat a non-stick frying pan, with a base is about 20cm in diameter. Add half of the oil and a little butter. Once the butter is foaming, tip in the mushrooms. Season and then sauté for 2-3 minutes. Tip into a bowl and set aside.

Wipe out the frying pan and return to the hob. Break the eggs into a bowl and add the chives; then season and lightly beat. When the pan is hot, add the remaining oil and then a little more butter, swirling it around so that the base and sides get coated.

While the butter is still foaming, pour in the egg mixture, tilting the pan from side to side. Stir gently with a fork or wooden spatula, drawing the mixture from the sides to the centre as it sets. When the eggs have almost set, scatter over the reserved mushrooms. Tilt the pan away from you slightly and use a palette knife to fold over the omelette.

Serving Suggestions

Slide on to a warmed plate and serve at once with the rocket salad and some crusty bread.

Other suggested fillings are roasted peppers, crispy bacon, scallions or tomatoes, depending on what’s in the fridge.
